A Hot New Pop-Up Bar Debuts Inside Downtown Dallas’s Fairmont Hotel

The Ember pop-up bar will highlight both the art and dishes of their sous-chef

A new pop-up bar at Fairmont Dallas features dishes, drinks and artwork from Executive Sous Chef Katie Symons in the hotel’s artist-in-residence area. Symons, who previously worked at the centuries-old Rocky Mountain Resort Broadmoor, is also a lifelong artist who reinvigorated her interest in painting during the COVID-19 pandemic and restaurant closings in 2020.

At the Ember, the pop-up, guests can enjoy dishes like the French onion brulée burger, grilled shrimp glass noodles, and drinks like the Fairmont’s smoked Old Fashioned while surrounded by larger-than-life modernist artwork by Symons that set the cityscape of Dallas pose. No word yet on a full schedule for the pop-up, but it is expected to be around a month.

The Plano Craftway Kitchen tavern opens a second location in Frisco

Craftway Kitchen, the lively neighborhood hangout in Plano’s Lakeside Market, known for its cozy terrace and extensive menu, will open a second location in Frisco. The new eatery at 5729 Lebanon Road in the Starwood neighborhood is expected to open in the first quarter of 2022. Like the Plano location, which opened in 2019, the menu of the Frisco spot is American cuisine at moderate prices in a friendly tavern in the neighborhood with daily happy hours and a weekend brunch. Nothing is known about the exact opening date.

Hai Hospitality appoints Rhonda McCullar from DFW as head chef at Uchi

Rhonda McCullar, an Ennis, TX native who became known for her vegetarian dishes, has been promoted to head chef at Uchi Dallas and Uchiba, according to a statement from Hai Hospitality. McCullar, who joined the Hai team in 2015, initially worked as a sixth grade science teacher while attending cookery school. McCullar, who is a vegetarian herself, has built a reputation for reducing and reusing kitchen waste by incorporating unused ingredients into new dishes, and for her elaborate fish and protein dishes alongside her vegetarian cuisine. From now on she will be in charge of Uchi and Uchiba’s kitchens.
