Deep Fried I-35, Brisket Brittle Top List of State Fair of Texas Food Finalists
The last 10 over-the-top dishes for the 17th annual Big Tex Choice Awards have been officially announced. The dishes, many of which were deep-fried according to the great tradition of the State Fair of Texas, were selected by a jury from a group of 32 savory and sweet creations. A winner in each category – plus a winner for “Most Creative” – will be crowned on Sunday, August 29th. This year’s event is closed to the public due to the ongoing COVID-19 pandemic.
The hearty finalists include:
- Crispy crazy corn – Fried corn nuggets with pulled pork, pineapple coleslaw, jalapeño crema and coriander.
- Fried I-35 – A sweet and savory kolache filled with brisket, peaches and Dr. Pepper glaze.
- Deep fried seafood gumbo balls – Fried canapes with shrimp, chicken, blue crab meat and andouille sausage and served with a garnish of dark roux.
- Lucky duck dumplin ‘ – A pastry filled with cream cheese, duck bacon and herbs
- Pork shots – Smoked sausage, wrapped in bacon, then filled with mac and cheese. The makers call it “a party in your mouth”.
The sweet finalists include:
- Fried Halloween – A large chewy pretzel bathed in corn syrup, topped with orange and white buttercream, and then topped with marshmallow whipped cream. The pretzel is then stacked with Halloween candy like Reese Piece, Mini-Twix, Orea Crumbles, and Candy Corn.
- The armadillo – An ice cream sandwich made from two dillo-shaped biscuits made with a branding iron, then sprinkled with biscuit butter and dusted with sugar.
- Brisket brittle – Peanut brittle, but the peanuts have been replaced with Smokey Brisket.
- Fernie’s Fried Toffee Coffee Crunch Cake – Cake donuts with English toffee, crispy almonds and sweet vanilla pudding, then dipped in an egg batter and deep fried
- Texas Pumpkin Poke Cake – Pumpkin pie coated with vanilla icing, caramel syrup and whipped cream and dusted with a secret mixture of spices.
The president of the Dallas-based Tex-Mex chain, Uncle Julios, has died
Harper Caron, president of Uncle Julio’s Dallas-based Tex-Mex chain, died this weekend at a hotel in downtown Dallas. He was 45. According to CultureMap, the police were called to the Statler Hotel early Saturday morning, where they found Caron unresponsive. A native of New Orleans, Caron started working for the chain 25 years ago, worked his way through the ranks, and was finally named president in 2019. No cause of death was disclosed.
New Orleans Coffeeshop PJs Continues Expansion in Dallas
PJ’s Coffee, the New Orleans coffee shop founded in 1978, will open a location in Euless on Monday, August 16. To celebrate the opening, the store on 900 North Industrial Boulevard is offering free beignets while supplies last. It will be the fourth location in North Texas, in addition to the McKinney, Northlake and North Dallas locations. Several additional locations are planned for the area.
