Is it maybe 90 degrees today? Quite possible. Is there currently a sauna outside? Oh, definitely. You may be wondering, soup – why? Let me finish It’s hot outside so you might as well accept it. Like goes with like; it’s science.

I could swim my laps in this crimson soup, whose deep red hue comes from a smoky ancho guajillo pepper base. The braised pork is not tough, but tender. The hominy keeps its shape. Not too much fatty oil floats on top, which makes every sip full of flavor.

There is no shortage of ramen shops in Dallas, in fact we could make a whole list of the best. Many, like Wabi House, have heavenly tonkotsu ramen, which is a rich and creamy broth made from pork bone.

You really can’t go wrong with the broth dishes at this Lower Greenville restaurant. That Soup is a specialty here; The pork-based broth is cooked for 18 hours, distilling the richness of the pig into a luscious broth that is served with clear tapioca noodles, grilled ham, char and prawns. As an egg noodle fan, I love them Minh Hoanh Thanh, a wonton noodle soup with soft-boiled quail eggs, shrimp cake and char sauce. That pho and Bun bo shade are also two star soups.

Nikutama
AT MARUGAME UDON
Thick, springy, tough, tender – that’s the Sanuki-style noodles at Marugame Udon in Carrollton. Noodle masters make fresh udon by hand behind the glass at the beginning of the order line, where you can choose your dish from simple (the kake, which is noodles in dashi for less than $ 6) to the nikutama, a marugame favorite, sweet- hearty beef and a delicious egg.

Okay, for those anti-soups out there who refuse a steaming bowl, there is another option. Homewood’s summer soup will get you doing things, bad things like licking the ceramic vessel clean like no one is watching (but we watch, we see you at table four). Recently there was a chilled peach soup with a little spice and nice crabs in the main peach season. That can be good and gone. There’s also a chilled corn soup with more crab, bacon, and jalapeño. What chilled soup they serve, we eat. You’d do well to catch up if a cool bowl is more our pace.
