Homemade barbecue on the menu at new Kalkaska truck | Food
KALKASKA – Lisa Dallas worked as a waitress and bartender for years before setting up on her own.
She and her boyfriend Brian Berger started Billy Bob’s Boneyard BBQ, Grill and More at the start of the COVID-19 pandemic in March 2020. When many restaurants closed, the food truck stayed open.
Dallas said it started with their homemade macaroni and cheese, which she often brought to memorial services or graduation ceremonies.
“People in town knew about our food,” she said. “The people in Kalkaska support our business. We have our regular guests. “
The menu includes pulled pork sandwiches, beans, loaded onion leaves, fried cheesecake, and more. Dallas said a popular product is their fried potato salad. She cooks and mashes the potatoes, then adds spices, cheese, bacon, and peppers.
“It’s like a loaded potato,” she said. “Instead of mayonnaise, we use a sour cream base with homemade horseradish sauce.”
The barbecue sauce is also homemade and all meat is smoked. Dallas said she took care of the chicken, but Berger took care of the rest of the proteins.
“He’s got his own business,” said Dallas. “When he’s finished his day at work, he smokes the meat. It’s a lot of work and he was my savior. And he’s good at it. “
Berger said his method is to rub the meat with olive oil and smoke it over maple or oak wood. He usually starts the 12 hour process on a Sunday afternoon. Every 25 minutes or so, he adds more wood or checks the temperature.
“It’s a lot to watch the smoker,” he said. “It’s a work of love.”
Although the process is time consuming and ingredients are often difficult to find, Dallas said they will continue to smoke meat because “we are known for this”.
He said he sometimes adds ribs or brisket to the menu when he finds time to cook them.
Billy Bob’s Boneyard BBQ, Grill and More spent his first year at Railroad Square in Kalkaska, the summer months at Dewitt Marine on Clam Lake, and then returned to Kalkaska in early August. They also offer events.
In June they took first place with The Dig’s Food Truck in Elmira in the Food Truck category of the Red Hot Best of Kalkaska, Gaylord and Grayling.
The food truck is currently on Railroad Square in Kalkaska from Tuesday to Thursday from 11 a.m. to 6 p.m., Friday from 11 a.m. to 7 p.m. and Saturday from 11 a.m. to 6 p.m. Dallas said they will close in late October and plan to reopen for the March or April season depending on the weather.
