It’s OK to cheat with a package mix

Sauce is known to be hard to come by at Thanksgiving dinner. But it’s okay to cheat. If you’re planning on using this trick for your Thanksgiving meal, add sub-turkey drippings for butter to the sauce, and add chopped liver and kidney.

6 minute Thanksgiving sauce

1.87 ounce package of sauce mix

1/2 cup of water

4 tablespoons of butter

1 tablespoon of chopped shallots

1 tablespoon of chopped garlic

1 1/4 cups of wine (red for beef, white for poultry or pork)

2 tablespoons of chopped fresh herbs of your choice, such as rosemary, sage, thyme, parsley

In a small bowl, mix powdered sauce with 1/2 cup of cold water until complex has dissolved / incorporated.

Melt butter in a large pan over medium heat, add shallots and garlic. Fry for 2 minutes, stirring, until shallots and garlic are tender. Add wine. Bring the mixture to a boil for another 2 minutes. Add sauce and keep beating until mixture comes to a boil. Whisk while cooking for an additional 2 minutes until mixture begins to thicken. Remove from heat and fold in fresh herbs.

Sauce becomes thinner than sauce. If you want a thicker sauce, reduce the wine to 1 cup. Use herbs of your choice to complement the finished dish.

Use a decent wine as the taste becomes more concentrated as the alcohol evaporates.
