New Apothecary bar debuts avant-garde cocktails on Greenville Ave
There’s a new bar on Greenville Avenue in Dallas with a certain Collin County Cred: Called pharmacist, it’s a spin-off from Rye, a restaurant-cocktail-bar in McKinney, and opened July 7th in the former Wah Wah Room on Greenville Ave.
One publication calls Apothecary an “avant-garde cocktail lounge with ultra-inventive tips”. I mean, this is a Grade-A release.
The goal is to offer an incomparable drinking experience and to push the boundaries for daring cocktail creations, new techniques and creative presentations.
It also has a theme that is always fun with a bar.
“Pharmacists are the source from which bartending and cocktails evolved,” says owner Tanner Agar. “We have a team that is very passionate about researching new flavors and combinations. As with the pharmacists of the past, our team’s exploration and in-depth research still open up new possibilities and we wanted to reflect the connection to the past and present on our behalf. “

The cocktail menu is divided into three categories, each with an increasingly complex structure and ingredients:
Over the Counter offers entry-level cocktails such as Only Fans with reposado tequila, passion fruit, lemon and cassis caviar; and High Horse with Ironroot Bourbon, Rittenhouse Rye, malted barley, toasted oat syrup and smoked hay.
The recipe menu is one level up, with options like the Octopus’ Garden with tequila, mint-basil-sage mixed with liquid nitrogen, oleo, peated scotch, ink, and charred octopus; Chanel No. 5 with Yaupon gin, dry wormwood, jasmine, orange blossom and sandalwood perfume; and Pekin Tom with Stellum Bourbon, peach liquor infused with Lapsang tea, absinthe and peach smoke.
Illicit Elixirs offers even more adventurous choices like s Orange Julius Caesar with shochu, clarified orange, clarified tomato stock, mussel essence, Greek yogurt and pickled orange onions; Cacio e Pepe with Grana Padano gin, lemon, cream, pink & black peppercorns, egg white and soda; and the R-Oaxaca Fort with blue cheese-washed mezcal, house mole liqueur and bitters, topped with a white chocolate grill.

The menu offers small plates such as:

Gimlet Ceviche with Texas redfish, gin-lime marinade and cord lime juice

Oyster Not Oyster, a vegan option with salted oyster mushrooms in an edible bowl, candied Fresno, brine foam and chives

Green eggs and jamon with Iberico Serrano Jamón, wasabi tobiko, cognac shallot aioli, house sourdough, English muffin and micro greens.
There is also a luxurious caviar service and an elaborate dessert called Candelabra, a set of three edible candles in three flavors: Angostura Bitter Chocolate, Piña Colada and Clover Club – a classic cocktail made from gin, raspberry and lemon.

Apothecary is an intimate lounge with 40 seats inside. The room was transformed into a dark, atmospheric cocktail bar with peacock wallpaper, custom-made velvet seats, natural wood tones and decorative objects from estate sales by designer Valerie Eckert.
A special bartop was made by Nate Saez and Grace Tudor at Rad Figure.
The pharmacy is initially open Wednesday-Sunday 5 pm-12 pm, reservations are only possible from 5 pm-6: 30 pm.
