Chef Ronnie Schwandt, General Manager of Verbena Kitchen and mixologist Dallas Juanes work together to create an exciting pairing menu with a unique approach to autumn vegetable preparation for a fully vegetarian dinner menu. Each dish is paired with a low alcohol content and shows how wine-based cocktails have developed dramatically.
Both the cook and the mixologist will show and explain to guests how processes such as fermentation can play an important role in the flavor profile of dishes and cocktails and how this can be applied for a variety of applications.
This multi-course dining experience from farm to table in Verbena Kitchen’s inviting dining room is a pure example of the local, seasonal and sustainable culture and how these cocktails and food combinations push the boundaries of the craft.
