Yim Yam owners trade in food truck for soft-serve with new McKinney Square store
Kham Phommahaxay and his wife Yim have been running a Thai fusion food truck called Yim Yam since 2014.
But the Frisco couple, attracted to the cool factor of soft ice cream, sold the truck to make way for Miruku Creamery and Cafe, their new downtown McKinney store that opened this fall.
Phommataxay aims to serve a type of ice cream that has more Japanese influence, he said, with milk being the main ingredient. “Miruku” means “milk” in Japanese.
“I’ve been looking for the creamiest milk I can find,” said Phommaaxay.
The store will also serve coffee from a local roaster – either one in the Dallas or the North Dallas area, Phommaaxay said, adding that he is still considering vendors.
No matter which direction he goes, he hopes to support local businesses.
“We want to help the community and use what is available to us,” he said. “We would like to use regional products or fruits from this area for our toppings.”
It’s a standard that he and Yim have set with their popular food truck. Though the truck hasn’t been around for a long time, the couple hope this new business is a path into another. Phommaaxay hopes to open a Thai grocery one day.
Meanwhile, opening Miruku is “a little easier than a full-blown restaurant,” he said.
