Osceola High School BBQ Team takes World Championship
OSCEOLA, Mon. (KY3) – With food and gratitude at the heart of this week’s celebrations, it’s only right to highlight a group of local teenagers who are grateful that their food put Osceola on the map.
The high school’s FFA Chapter Bar B Que team brought their culinary talents to Texas.
An afternoon cooking is the group’s homework. Not many students have classwork like this.
“Parents send me things or small text messages,” said Charles Simpson, FFA advisor, “like, ‘Hey, thank you! The first thing we’ve done together in a long time ‘or do you know,’ Hey, this meal was great and I want to show you the pictures’ and you know, they’ll do mom and dad homework. “
All of this delicious homework was preparing for the World Cup. Osceola represented the state of Missouri in Dallas, Texas.
“I had a lot of fun driving,” said Grace Colby. “We went in the wrong direction a few times.”
“I had to drive with Mr. Simpson and all the girls,” said Skylar Wohlers.
“We just looked at it as an exercise,” added Jordan Jackson, “and just ignored all other people.”
“I don’t get really nervous,” said Cole Thomas. “I hold my emotions.
Teams of five have a 20 “by 20” area to cook five different products at five different times. Your sponsor cannot reach into the area, otherwise the team would be disqualified.
“I just gave them a few coaching tips and walked away,” said Simpson.
Lone senior Cole Thomas was in charge of the team’s ribs.
“Put them in the smoker at 300 degrees,” said Thomas. “And then after an hour I wrap them in foil. And I’ll add something (special sauce) and put it in with the foil. And then cook for about 30 minutes. “
Kloie Hooper took care of Osceola’s burger.
“I use a ranch package and put it in my burger,” said Hooper. “And I also use eggs to hold it together. So I do that and then I cook it and I have my special sauce. “
The team’s chicken submission was the responsibility of Jordan Jackson.
“I use three mixes of the sauce and three mixes of seasoning,” Jackson said.
One of the toughest categories is always steak. It was given to freshman Skyler Wohlers.
“It’s one of the better steaks I’ve ever eaten,” said Wohlers. “It’s one of the toughest competitions in the categories.”
Grace Colby made a Dutch Oven Apple Cobbler for dessert.
“I put some melted butter on it,” said Colby, “and I just put it on the charcoals. And I cook it with eight charcoals below and 20 above. “
The teams are evaluated according to the presentation, the method of preparation and the taste profile.
“The judge gets a bite and they put it on it,” Simpson said. “When you tried that, this student got the flavor nice and even from side to side, top to bottom. And did they hit all these taste buds. “
Simpson has already participated in cooking competitions. With a runner-up in the Chicken and Dessert World Championship, Simpson knew his team had a chance to leave Dallas as one of the best schools. “
“I’m starting to think, ‘Hey, we’re going to be hard to beat,’ we have to be first or second,” Simpson said.
Kloies Burger won first place.
“I thought, ‘I’ve just won worlds.’ I thought that was pretty cool, ”said Hooper.
And Cole’s ribs won first too.
“It’s pretty great,” said Thomas. “It was a good experience.”
Chuck knew that math was going to win the small town of Osceola the World Cup.
“You named third place and I thought, ‘We’re not one of them,” said Colby.
“When they announced runner-up, I just screamed,” said Simpson. “I know you’re probably thinking, ‘Man, he’s that crazy guy,’ but I cheered because at the moment I knew, hey, we just did it.”
“I couldn’t stop jumping around and everything,” Wohlers said. “Everyone went crazy.”
“They gave us a smaller trophy first,” said Hooper. “And then they say, ‘No, come back. You have the wrong thing. ‘ When we got that and we say, ‘Oh my god, that’s great.’ And it’s bigger than me. “
“We had to get a new trophy case because it’s so big,” said Colby.
“I was like, ‘Wow, how did we do that,” Jackson said. “Because I mean, Texas, there are about three teams in there that are at the top every year.”
“When you get the reward for making these kids successful,” said Simpson, “you see a kid and what it means to them, it’s great. I mean, that’s a feeling that can hardly be explained. “
Simpson was dying to meet the late Dr. Mention Charles Bourland in this story. He was a NASA space food scientist and a native of Osceola. He returned to his hometown later in life and was very giving. He helped found the FFA chapter in the high school.
Next, the Osceola Bar B Que team automatically qualified for the June Nationals in Texas.
